Just to introduce myself, I am a 50 something wife & mom of 2 college kids. Being overweight all of my life, since age 6, I have been on a perpetual diet all of my life. New month, new diet ~ you know what I mean don't you!
Also,recently, being diagnosed with diabetes type II I knew I had to lose the extra 75 lbs I had carried all of my life. Some drastic changes were in order. Being an RN, I had no excuses. I knew I had to adopt a healthier lifestyle.
Luckily for me, my kids had decided 3 years ago to dedicate themselves to a vegetarian/vegan lifestyle. I noticed they stayed with it easily and were becoming more and more healthy! My son had lost 50 bs!
I began exploring simple, easy recipes to fit the vegan lifestyle. I have always loved cookbooks and recipes, but I like the simple, quick, easy to fix ones. Nothing comlicated for me!Besides that they had to taste good too.!
Then on March 1, 2007, I made the plunge and decided I was going vegetarian, Oh my gosh, to my amazement I have lost 30 lbs. My diabetes is in perfect control. I could not believe how easy it has been!
Now, I still have about 50 lbs to go, and I have decided to devote this website to anyone wanting a adopt a vegan/ vegetarian lifestyle. It's my therapy and keeps me focused! Please join me in my journey, as I explore the vegan/ vegetarian lifestyle...
